Planting Instructions:
Seed Preparation:
Soak seeds in warm water for 24 hours before planting to soften the seed coat and enhance germination.
Sowing:
Sow seeds directly outdoors after the last frost date when the soil temperature is at least 70°F (21°C). Alternatively, start seeds indoors 4-6 weeks before the last frost date. Plant seeds 1 inch (2.5 cm) deep in the soil. Space seeds 12 inches (30 cm) apart in rows, with rows spaced 3 feet (90 cm) apart.
Germination:
Keep the soil consistently moist but not waterlogged. Seeds typically germinate within 7-14 days. Ensure seedlings started indoors receive ample light by placing them in a bright, sunny window or under grow lights.
Transplanting:
Transplant seedlings outdoors once they have at least two sets of true leaves and all danger of frost has passed. Harden off seedlings by gradually exposing them to outdoor conditions over a period of 7-10 days. Plant seedlings at the same spacing as direct-sown seeds: 12 inches (30 cm) apart in rows spaced 3 feet (90 cm) apart.
Care and Maintenance:
Water plants regularly, ensuring the soil remains consistently moist but not waterlogged. Mulch around plants to retain moisture and suppress weeds. Provide support for the vining plants by using trellises or stakes. Monitor for pests and diseases, and treat as necessary using organic methods. Harvest the tubers when they are large enough to eat, typically 4-5 months after planting. Carefully dig up the tubers, taking care not to damage them.
Happy gardening!
